Hii again Foodies, Today I am sharing a kerala recipe most commonly served as a side dish along with sadya. Vellarika Kichadi is one of the important dishes in the onam sadya menu. Its a very simple and easy recipe prepared with cucumber, yogurt and coconut. Its a yogurt based vegetarian dish, can serve as a side dish for rice. For making kerala kitchadi you can use cucumber, ladies finger, carrot, ash gourd, bitter gourd etc. This recipe is very similar to how my mother-in-law makes kitchadi, but she used to make with fried ladies finger. So lets have a look, that how I prepared this easy Kerala style kitchadi.
How to Make Cucumber Kichadi – Kerala Vellarikka Kitchadi Recipe
Peel off the skin, remove the seeds and wash cucumber well. Chop them into small cubes and keep it aside.
Transfer the cucumber into a sauce pan, add 1/2 cup water, 1 green chillies roughly chopped and required salt. Cook it till cucumber turn soft. keep it aside.
Grind Coconut, green chillies, mustard seeds and cumin seeds into a smooth paste. Then add the ground coconut paste, cook on a low flame for 3-4 mins.
Whisk yogurt well, then add to cucumber mixture and give a stir, adjust salt at this level. Remove it from flame. Transfer this to a serving bowl.
Heat a fry pan pour coconut oil , add mustard seeds and allow it to splutter. Then add dry red chillies and curry leaves, saute it for a minute.
Pour the seasoning to the kichadi.Serve it with any steamed rice.
