Hii again Friends, Malabar style Ghee Rice is a yummy meal cooked in ghee with authetic spices. This is the easiest and simplest version of ghee rice recipe. This is my family favourite rice recipe, especially from malabar cuisine. Tasty ghee rice, can be served with nadan chicken curry, malabar mutton curry, egg curry and even with vegetable korma. I got this recipe from my Thalassery neighbour Sheena, she always used to cook ghee rice at her home in all festivals. In her recipe she use kaima rice / short grain rice only for making ghee rice, which is commonly used in malabar area for making ghee rice or briyani recipes. So here is my ghee rice recipe with step by step cooking pictures. Lets see….
How to Make Malabar Ghee Rice- Neychoru Malabar Style
Wash rice and soak in water for 30 mins, drain the water and keep it aside. Heat3 tbsp ghee in a deep bottom frying pan, and add whole spices and saute for 3 mins.
Add chopped onions and fry it for few mins, when onions turn color to light pink add chopped ginger. Cook till ginger turns soft.
Now add the drained rice and fry it for 5 mins in medium heat
Pour 4 and 1/2 cups of boiling waterand add salt, the ratio is 1 cup rice = 1 and 1/2 cup water. Cover with a lid and allow it to cook in low heat until rice turns soft and water evaporates.
Meanwhile heat 4 tbsp of ghee in a pan, fry raisins, cashew nuts and onions until brown color.
When water completely evaporates from rice, turn off the flame, Stir the rice carefully. Then add fried cashew nuts, onions and rasins and corriander leaves. Pour 2 tsp of ghee on top if needed. Close it with lid and keep it rest for 30 mins before serving.
Now our tasty ghee rice is ready to serve. Serve hot along with side dish of your choice.
