Hi Foodies, I am again back with a Chicken recipe, Kerala Style Chicken Stew. Stews are mildly spicy and coconut creamy side dish, which is very popular traditional side dish in Kerala. Chicken stew is cooked in coconut milk along with potatoes, green chillies or can add other vegetables of your choice. This is normally a breakfast recipe served with kerala appam,palappam, pathiri or bread on special occasions specially Christmas and Easter. Chicken stew is also called as Chicken Ishtoo in kerala. How to Make Kerala Style Chicken Stew
Wash and clean chicken pieces well, drain out and set aside.
Heat a deep bottom sauce pan with coconut oil, add cinnamon, cardamom, cloves, bay leaf and star anise, saute until the aroma of the spices arrives, be careful not to burn.
Next add in onions and green chilies, and saute it for 2 mins in a medium low heat or until onions are slightly brown in color.
Now add in ginger, garlic and crushed black pepper. Saute until the raw smell completely diminishes and onions are brown.
Then add in potato and saute it for a minute.
Now pour thin coconut milk and combine well. Cover the pot with a lid and cook until potatoes are half cooked.
Add in chicken pieces and cook until chicken is cooked completely.
Add corn flour diluted thick coconut milk and do not boil the curry again. Keep the flame on low and cook for few seconds, adjust salt.
Finally drizzle little coconut oil on top, then add in curry leaves, fennel powder and crushed black pepper. Give it a quick stir and keep covered the pan for 10 min.
Ready to serve, serve it along with kerala appam.
