Kabsa, which is also known as Al- Kabsa is a kind of traditional food of Saudia Arabia,where it is commonly regarded as a national dish. Its is very popular in all Arabian Countries.In places like Qatar, the United Arab Emirates, Kuwait the dish is popularly known as ‘Machbus’. It is a rice dish cook along with different kinds of meat and other spices. Different kinds of meat can be used, such as chicken, lamb and beef, to others that are more exotic or specific to the region, such as goat or even camel meat. The long grain basmati rice are usually used to make Kabsa. Today I am showing the recipe of Chicken Kabsa.
The technique of cooking Kabsa varies, and just like that every house has it own way of cooking. Today I will share a easy method, which will be easier for beginers in cooking.
How to Make Chicken Kabsa- Al Kabsa- Traditional Saudi Rice and Chicken
Heat a large pot, add 1 tbsp butter and ghee. Then add onions and saute it for a couple of minute.
Add the cardamom pods, cinnamon stick, pepper corns, star anise, cloves, dry lemon and fennel seeds and toss well.
Now add in crushed ginger and garlic, stir and saute it until raw smell completely disappear.
Add the tomatoes and cook until softened, then add in turmeric powder, arabian spice powder, coriander powder. saute until raw smell disappears. Keep the heat in medium low.
Now add the chicken pieces and keep frying for 2 minutes. Add salt and green chillies, combine well.
Add in tomato puree and mix well.
Now add in 3 and 1/2 cup of water and a chicken cube. Let the chicken pieces cook for 20 minutes with lid on in a medium low flame.
After the chicken is cooked, slowly remove the chicken pieces from the gravy. Now after 20 minutes there should be around 3 cups of water by now. In this gravy you should cook rice. ( ratio= 1 cup rice= 2 cup gravy). So add the rice, cover the lid and cook the rice until the gravy got absorbed.After water fully absorbed keep the pot in very low heat for 5 mints, do not open the lid atleast 15 mints.
Fry the cooked chicken pieces in 1 tbsp butter in a frying pan.
Transfer the rice to a serving plate, place the chicken pieces on top and serve along with lemon and tomato slices.
