Fried rice isreally simply delicious dish, cook with steamed rice stir fried in a wok, mixed with other ingredients, such as eggs, vegetables and meat. Today, Chinese food is an integral part of the Indian culinary scene.
Indo- Chinese cuisine is the adaptation of Chinese seasoning and cooking techniques to Indian tastes. The Indo- Chinese cuisine is said to have been developed by the small Chinese community that has lived in Kolkata for over a century.
Chicken Fries Rice is one of the most popular rice recipe in Indo-Chinese cuisine. Fried rice is a one pot meal, can serve along with tomato sauce or any chinese gravy of your choice. Today I am going to share the recipe of authentic Indo- Chinese restaurant style chicken fried rice. So lets see the easy and delicious recipe.
How to Make Chicken Fried Rice- Indo- Chinese Restaurant Style Fried Rice
Soak basmati rice for 20 minutes, drain out the rice and cook rice in salted boiling water until 80 percentage done. Strain it through colander and let it cool. It will be perfectly cooked for another 10 percentage while resting.
Clean and wash the cubed chicken pieces, Add 1/2 tsp vinegar, cornflour, 1 tsp soya sauce, 1/2 tsp pepper powder and combine well.
Heat 1 tbsp oil in a heavy bottom frying pan, add cubed chicken pieces, cover and cook on a low flame. Keep stirring to prevent burning.When chicken turn tender, stir fry and transfer to a plate. Keep it aside.
On the same pan add the remaining oil. When oil turns hot add chopped ginger and garlic, fry until it smells good. Then add onions and green chillies, saute it until onions turn transparent.
Add carrot, beans, cabbage and saute for a couple of minutes. Saute until the veggies are 3/4 th cooked and crunchy.
Beat the eggs with salt and pepper, Keep the fried veggies on one side of the pan and add the eggs, allow to set for 5 seconds. Then scramble well, scraping from the bottom of your wok and frying without burning.
Add the cooked chicken pieces along with cooked veggies and egg mixture. Add in salt, green chilly sauce, soy sauce, chilly garlic sauce and pepper powder. Mix well.
Add cooked rice, mix gently. Combine everything well without breaking the rice grains.Add vinegar and spring onions. Serve hot with gravy of your choice.
