Egg Roast is a delicious dish native to Kerala, India. It consist of hard boiled eggs, peeled and then simmered in a pan with an flavored aromatic masala with roasted onion and tomato based thicker gravy. It is prepared both dry and gravy, commonly served as side dish mainly with appam, puttu or chapattis. The orgins of roasting eggs in a masala sauce probably orginated in the Sothern state of Kerala.
I prepared this egg roast in typical Kerala style. This egg roast recipe comes straight from my Mom’s / Amma’s kitchen. It is a delicious spicy preparation, at home she used to serve it along with appam’s and it is one of the favorite break fast of me, from my childhood. It is one of the most popular breakfast recipes of Kerala.
At my home we prefer egg roast without gravy, like to have a richer, thicker gravy. No matter how you prefer, if you want you can add coconut milk or water to make the egg roast with some gravy.
How to Make Kerala Style Egg Roast- Nadan Mutta Roast- Dry Egg Curry Recipe
Boil the egg with 2 tsp salt on water. Adding salt prevent egg from cracking while boiling. Use large pan with enough water to cover the eggs completely. Once cool peel the shells and keep it aside.
Slice onions, ginger, garlic, green chillies and chop tomatoes and keep it aside.
In a wide frying pan, pour oil and add mustard seeds, allow it to splutter.
Add the sliced onions and curry leaves, then add in salt and turmeric powder. Roast the onions on medium heat until soft and transparent.
Now add the ginger, garlic, green chillies and saute for 2 minutes until nice aroma arrives. Then add the tomatoes and combine well.
Now add garam masala powder, pepper powder, coriander powder, chili powder and saute till you get a roasted aroma of the spices. Keep the flame on low. Pour 1/2 cup water, mix well and allow it to boil for 2 minutes. If you want gravy add 1 cup coconut milk or water.
Now make some slits over the boiled eggs vertically. Then add the eggs to the masala gravy and toss it well. Cover the eggs with the onion masala and cook in a very low flame for 3-4 minutes.
Remove from the heat and serve it along with appam.
