Calamari Roast- Nadan Koonthal- Kanava Roast -Kerala Style Squid Recipe, is one of the all time seafood delicacy. This recipe is a traditional Kerala Style preparation with squid. The authentic recipe with step by step cooking pictures follows.
Squid Roast is yet another recipe, which can prepare very easily and taste so yummy. In Kerala and Tamil Nadu, squid are called Koonthal, Kanava or Kadamba. In Kerala squid are eaten deep fried, roasted, stir fry with coconut or as squid gravy. Squid is a popular food in many parts of the world. ‘Calamari’ is a culinary name for squid, especially for dishes from the Mediterranean. There are lot of ways of cooking squid, with every country and region having its own recipes. Squid is a rich source of protein, vitamins and minerals, especially good for kids.
In this prepration, cooking in a claypot give more taste to the recipe. If you dont have a clay pot, use a non-sticky pan or kadai. In this roast I have used both tomatoes and tamarind juice, you can skip tamarind juice and increase the quantity of tomatoes also. So lets see how I prepared this yummy roast without spending much time in kitchen. How to Make Calamari Roast- Nadan Koonthal- Kanava Roast -Kerala Style Squid Recipe
Clean and wash the squid, cut into ring pieces.
Heat a pan with coconut oil, add chopped onions saute until onion turn soft.
Add in ginger, garlic, green chillies and little salt. Combine well and simmer for 2 minutes.
Saute well until onion become light brown in color, add in Kashmiri chilly powder, coriander powder, fennel powder, turmeric powder and pepper powder. Take care not to burn the spices, keep the flame on very low.
Now add the chopped tomatoes and tamarind juice, along with this add 1/4 cup water. Cook until tomatoes turn mushy and soft.
Add squid, cover and cook for 20 minutes in a low flame. Squid will leave out water while cooking. Dont forget to give a stir in between.
Stir occassionally. When it is cooked, do not cover the pan, Saute and stir and make it dry.
Adjust salt and add garam masala powder, dry it 5 more minutes in a medium flame. Serve it along with rice or chappathi.
