Orange Caramel Pudding- Orange Flan- Pudding with Orange juice and Zest, is an open pastry or sponge cake containing a sweet or savoury filling. A typical flan shape is round and coated with caramelized sugar syrup. The detailed recipe with step by step cooking pictures follows.
Orange caramel pudding or orange flan is a creme dessert with a layer of soft caramel on top, as opposed to creme orange base. Caramel is a beige to dark brown confectionery product made by heating sugars. It can be used as a flavoring in pudding and desserts. This pudding will be a wonderful treat for the people who love citrus fruits, its a citrus based dessert and the recipe is quite simple.
This orange caramel pudding is very delicate to handle, such a soft mouth melting pudding. Here I have used a steamer to cook this pudding, you can use a oven too. If you are using an oven, it should be cooked in a water bath method. Always cook the flan in a medium low heat in a steamer for around 55- 60 minutes.
The first time that I had made this Orange caramel pudding was on my younger kid 1st birthday in 2014. I have got this recipe from a Indian food magazine, I have made this dish a couple of times since then and each time my family ask me to make more and more. If you want you can replace the orange with lemon too.
How to Make Orange Caramel Pudding- Orange Flan- Pudding with Orange juice and Zest
Keep all the ingredients ready and keep it aside.
To prepare the caramel, put 3 tsp sugar and very little water in a heavy bottom saucepan over medium flame. Stir until sugar dissolves, be sure that heat on low. When solution will start brown in about 5- 6 minutes, wait until it turn amber brown in color. Immediately switch off the flame and pour the caramel into butter greased mould. Swirl to cover the base of the mould and keep it aside.
In a bowl add butter and granulated sugar mix well until just combined, then transfer it to a blender and whisk along with eggs till fluffy.Keep it aside.
In a large bowl add maida and orange zest ( grated orange skin) along with that add milk and combine well.
Now pour condensed milk and orange juice. Gently beat the mixture together, the mixture should combine well.
Pour the egg - butter mixture slowly added to the milk batter little by little and combine well. Finally add cinnamon powder and mix well, So now its ready to steam.
Transfer this mixture into the steaming mould and keep it ready.
Boil water in a steamer for 5 minutes and place the orange caramel pudding in the steamer. Close the pudding mould with a lid, once the steam comes close the steamer also. Simmer for 45 mins in a low flame.
Cook until a knife inserted in the centre comes out clean. If it is done, Off the flame and allow it to cool down in room temperature.Keep in fridge and serve chilled.
