I just love this pudding, so easy to do. Sometimes we come upon a recipe by chance, this is what happened to me with this Lemon sponge pudding. I got this recipe from one cookbook, which my hubby gifted me on our last wedding anniversary. This pudding can serve warm direct from the steamer with a yummy lemon sauce. A steamed pudding is not much hard to make, once your pudding is mixed and put on to simmer, you can relax and wait.
Sauce is not the only sweetener here, however the base is commonly a sponge mixture, made with butter, flour, eggs and sugar. Steaming, then, is the traditional cooking method here. It gives a sponge texture and a lovely color, I have used a pinch of lemon yellow color, its quite optional.
The definition of sponge pudding is a light steamed or baked pudding, spongy in texture, made with various flavourings or fruit. There is no better dessert than a traditional steamed pudding, easy to make and give your family a real yummy treat.
How to Make Lemon Sponge Pudding with Lemon Sauce- Steamed Delicious Pudding
Keep all the ingredients ready and keep it aside.
Take butter in a deep bottom mixing bowl. Combine the butter and sugar together until light and fluffy.
Then add the eggs and beat together till combined.
Add the flour and beat until well mixed, batter should be creamy and thick not runny. If you feel thicker add a little milk slacken to a dropping consistency.
Add one lemon zest and juice to the batter, just fold everything together. Keep the remaining one lemon for making sauce. Add 1/2 pinch lemon yellow color too ( optional)
Lightly grease the mould with butter and keep it aside.
Pour the pudding mixture over the mould and cover the batter with butter paper.
Then cover the mould with foil paper to stop steam escaping, secure with string around the top of the mould.
Heat a steamer with enough water and allow it to boil.
Set the pudding in the steamer and cover the steamer, cook and simmer for 1 and 1/2 hours to 2 hours. ( Make sure your pan does not boil dry)
Insert a knife into the middle portion of the pudding and its comes out clean, its done.
After cooling ( keep in room temperature) de- mould it to a plate and keep it aside.
For making the sauce, take out juice and zest of one lemon. Heat a pan with zest, lemon juice and sugar. Pour 1/4 cup water and allow to boil for a couple of minutes.
Dilute the cornflour with 3 tbsp water and pour along with sugar lemon liquid and boil for a couple of minutes in medium flame. Add half a pinch of lemon yellow color.
Pour this syrup over the sponge pudding and serve hot or chilled.
