An upside down cake is a cake that is baked in a single pan, then turned over and served upside down. Usually sliced fruits, such as apples, pineapples or cherries and a butter and sugar topping are placed on the bottom of the pan before the batter is poured in, so that they form a decorative toppings once the cake is inverted.
For baking this cake I have used a thick- walled non-sticky cooking pot with a tight fitting lid. This pot are well suited for long, slow cooking such as baking cakes, roast and pie etc. Virtually any recipe that can be cooked in a conventional oven can be cooked in this non-stick pot. Pour the batter on the pot and cover it with a air tight lid. Place this pot on a pre heated hot frying pan and cook for about 45- 55 minutes in a very low flame. Once done switch off and allow to rest for at least 20 mins. I was so happy that I made this cake successfully in pressure cooker. If you want you can bake this cake in oven too by following the same recipe.

How to Make Caramel Apple Upside Down Cake- Apple Upside Down Cake Recipe without Oven
Rub butter in a heavy thick walled non sticky baking pan and dust with flour. Keep it aside.
In a heavy pan add sugar along with little water and heat until dissolved. Bring to boil vigorously.
Allow sugar mixture to turn dark amber color, now remove from heat, add in lemon juice, a pinch of red color(optional) and butter, mix together. Pour the caramel to the cake pan and spread well.
Slice apple and arrange overlapping in caramel, set aside.
In a bowl, whisk together all purpose flour, baking powder and baking soda. Set aside.
In a large bowl, pour melted butter and add eggs. Beat well until combined.
Add sugar until smooth and fluffy.
Add milk and condensed milk, whisk until combined.
Add dry ingredients gradually ( flour mixture) continue beating until smooth.
Add vanilla and mix together.
Spread batter over apple wedges in sugar mixture.
Bake for 55- 60 minutes or until knife inserted in center comes out clean in medium low flame. Keep this cook pan on top of a dosa pan,( not using one )cover and cook until done, always remember that heat should be on very low. If you want to bake the cake in a oven, bake in 350 degree F ( 180 degree C ) until cake tester inserted in cake comes out clean, 40- 45 minutes. Let stand on rack for 5 minutes.
Cool for 15 minutes, after that run a knife around sides of pan to loosen cake. Place a serving plate upside down over pan, turn plate and pan over. Remove pan and serve along with vanilla ice cream.
