Pineapple Rice- Pineapple pulao, is an easy recipe with fresh pineapple cubes, that taste simply delicious. It is basically a mild spicy dish with a few select spices and dry fruits. The detailed recipe with step by step cooking pictures follows.
Pineapple pulao is a recipe with many attractive taste and serves as a main course dish. Pilaf/ pulao is a dish in which rice is cooked in a seasoned broth. In some cases, the rice may also attain its brown color by being stirred with pieces of cooked onion, as well as a mix of spices. In local cuisine it may used to add meat, fish, vegetables, fruits and dried fruits. Pilaf is famous dish in Soth- Central Asia ( Bangladesh, Nepal, Pakistan, India, Iran)
For this particular pineapple rice recipe I am using khaima rice/ jeerakasala rice. If you don’t have khaima rice, you can substitute it with basmati rice or brown rice, it is also available as Italian rice and glutinous rice which is popular in Chinese and Japanese cuisines. Khaima rice is a short grain, thin rice which is also called biryani rice in Kerala.
This is a yummy pulao have the best combination of sweet and spicy flavors. Its a quick and easy meal that’s so tastier, healthier and cheaper than any restaurant.
How to Make Pineapple Rice- Pineapple pulao- Pilaf- Easy Delicious Rice Recipe
Heat a deep bottom non-stick pan with ghee, add star anise, cloves, bay leaves and cinnamon stick. Stir and saute for a minute in a low flame.
Add cashew nuts and rasins, mix and saute for a minute.
I have taken 1 and 1/2 cups of rice, so we need 2 and 1/4 litre of water. Here I am pouring 1 cup of pineapple clear juice and 1 and 1/4 cup of water. Then add 2 drops of pineapple essence, a pinch of yellow color and salt as needed. Allow it to boil.
Add drained rice and mix well.
Cover and cook in a medium low flame until water full absorbed by the rice. When it is done off the flame, cover the pan and keep it rest for 5 mins. Then transfer it a colander and set aside to cool the rice.
Heat the same pan, add pineapple pieces with sugar and a pinch of salt, sprinkle little water and cook for 5 minutes. Pineapple should turn dry.
Then add in chopped capsicum and dry red chillies. Stir and saute for 2 minutes.
Now add in the briyani masala powder and pepper powder. Combine well.
Add the cooked rice and combine well. Off the flame.
Serve along with any spicy gravy or fry.
