Schezwan Noodles- Schezuan Veg Noodles- Indo Chinese Noodles, holds an indispensable place in Chinese cuisine. This noodles made with fiery and spicy schezwan sauce. The schezwan noodles, as the name suggests, is an authentic chinese preparation of Hakka noodles with sauteed veggies and this pungent sauce. Schezwan cuisine is a style of Chinese cuisine originating from sichuan province in southwestern China. It has bold flavours, particularly the pungency and spiciness resulting from liberal use of garlic and chili peppers as well as the unique flavor of the sichuan pepper. Schezwan noodles is a widly popular dish in Indo- Chinese cuisine. The recipe I have for you today uses a lot of vegetables, which can be replaced with chicken or egg for non-vegetarians.
My Hubby and kids love the Indo- Chinese food, so I used to make at home because it need very less time only and really super easy to make. All the hard work goes in thinly slicing the veggies, rest is easy and quick. And I am able to make the dishes which gives the real taste of restaurants.
Schezwan Noodle recipe is almost similar to hakka veg nodle recipe, the only difference is instead of soy sauce here we use schezwan sauce. It is a great one pot meal that you can make in under 25 minutes. This is perfect for a weeknight family dinner or a special treat for your child’s snack box. Serve along with any chinese gray of your choice.
How to Make Schezwan Noodles- Schezuan Veg Noodles- Indo Chinese Noodles Recipe
Boil 6- 7 cups of water in a deep bottom sauce pan with salt and 1 tsp of oil. After boiling add noodles and cook according to the packet instruction.
Then strain the cooked noodles in a colander, rinse the noodles in cold water and rub oil to noodles. Toss the noodles gently, so that the oil gets coated evenly on noodles. Set aside.
Cut all the veggies and set aside.
Heat oil in a wide non-stick pan or wok. Add ginger and garlic paste, saute on a medium flame for a few seconds. Then add in dry red chillies and combine well.
Add onions and saute for 30 seconds in a high flame.
Add carrots and saute for a minute.
Then add in the 3 colored capsicum and mix well. Saute for a minute.
Add salt, vinegar, sugar and schezwan sauce. Heat should be on a medium flame, saute for 1 minute.
Add noodles and mix well.
Add spring onions and combine well, serve hot along with chinese gravy of your choice.
