Normally in shawarma, the meat can either be lamb, beef, turkey or chicken. It was first introduced by people from Turkey. They call it cevirme, which means ‘turning’, because the meat can be turned around in the oven. The meat is roasted in a special oven before making it into a sandwich. Marinated chicken chunks are mounted on a large rotating skewer and then roasted accordingly to perfection against a burning grill. Due to the unavailability of such roasters at homes, chicken shawarma has typically remained a restaurant dish. But from this recipe you can easily learn a few tricks that can bring you the beautiful flavor of restaurant style chicken shawarma at home, without any industrial roasters.

This is a recipe for an pan roasted version of the classic street side shawarma, cooked on a rotisserie. This is perfect for an evening with family and friends. For making the white sauce by adding plain yogurt, lemon juice, garlic paste and mayonnaise, the sauce is the main taste provider of this recipe. Serve along with pickled carrot and green chilies.

Wash and clean the chicken, cut into thin strips. Marinate the chicken pieces with yogurt, cumin seed powder, barbeque masala powder, salt, garlic paste, pepper powder and turmeric powder. Let the marinate sit for 4 hours in refrigerator.

Chop the veggies and set aside.

For making sauce, in a bowl add yogurt, olive oil, garlic paste, yogurt, lemon juice, mayonnaise and salt. Combine well and set aside.

Heat a pan with 1 tbsp oil and fry the marinated chicken pieces, set aside.

Heat a pan and just warm the arabic bread by turning both sides for couple of minutes.

Then spread the sauce on the bread pieces.

Then spread few spoons of veggies.

Now add the chicken strips on the bread.

Roll it gently with the help of butter paper. Serve along with sauce and pickled carrots and green chillies.
