Paal Kozhukattai- Rice Balls Steamed in Milk is a popular chettinad sweet dumplings made from rice flour with sugar and milk. It is typically prepared on special occasion such as Ganesh chaturti, it taste great and is easy to prepare. The detailed recipe with step by step cooking pictures follows.
It can be prepared either with milk or coconut milk or a combination of both and flavored with cardamom. This recipe I am showing the combination of both milk and coconut milk. This is a sweetened pudding of rice dumplings steamed in a steamer and then cooked along with milk and condensed milk. At last pouring very little thick coconut milk. This is my Amma’s recipe and she used to add little saffron too.
There are different types of kozhukkattai like the mothak, kaara kozhukattai, sweet kozhukattai etc. But paal kozhukattai is the most tastey and my kids favorite recipe. Some recipes use jaggery insteadof sugar and normal milk instead of coconut milk. But using jaggery is the healthier version than white sugar.
How to Make Paal Kozhukattai- Rice Balls Steamed in Milk- Easy Dessert Recipe
Add salt and boiling water to the flour.
Knead it to soft dough as like of idiyappam dough, there should not be any dry flour, allow the dough to cool down a bit.
Rub your hands with little ghee and make small balls out of the kneaded dough and set aside.
Now place these prepared balls in an steamer and allow it to cook for 7 minutes. Set aside.
I have left 3 small kneaded rice balls, mix it with very little water without forming lumps and set aside.
Boil the milk, sugar and condensed milk together. Then add in saffron and cardamom.
Then add the cooked rice balls along with the milk and mix gently.
Add the prepared rice water mix and boil until the gravy turn slightly thick.
Add coconut milk, mix gently and off the flame. After adding coconut milk, do not boil.
Sprinkle little saffron diluted milk while serving.
