My mother-in-law used to cook idichakka thoran often and I learnt this recipe from her. In this recipe the tender fruit is used to cook and crushed using pestle or mortar, then stir fried with coconut along with some spices and served along with steamed rice. In early days the cooked jackfruit is minced used pestle or mortar so that is why the recipe name is Idichakka. But now a days we are using blender or grinder.
The taste of the dish is really yummy that you would love to make it quite often. But the cleaning part is bit messy and difficult. While cutting jackfruit better to rub oil in hand to prevent from sticking gum on hand. Try this at home and let me know how it turned out for you.
How to Make Tender Jackfruit Stir Fry with Coconut- Kerala Special Idichakka Thoran
Wash the cut tender jackfruit nicely in a wide pan, drain out and set aside.
Add turmeric powder, salt and water. Let this cook until soft and tender, takes around 10-12 minutes. Drain out the excess water and allow it to cool.
Meanwhile coarsely grind grated coconut, green chilies, garlic, shallots, cumin seeds and curry leaves. Set aside.
Coarsely grind cooked jackfruit in a mixer, not to grind much, only pulsed it in mixer once and set aside. ( Do the process in batches)
Heat a deep pan frying pan with oil, add mustard seeds, curry leaves and dry red chillies. Allow mustards to splutter.
Add chopped onions and fry until brown.
Add the pulsed jackfruit and mix well.
Make a well in the pan, and add the coarsely grounded coconut mixer. Cover coconut mixer with jackfruit and cover the pot with a lid for 5 minutes in a slow flame.Adjust salt at this level.
Open the pan and stir well. Serve it along with steamed rice.
