Note- To make the perfect and crispy potato fry use a non stick pan or a thick bottom iron pan. Cube the potato in almost equal size, wash them in running water and soak in salt water for 10 minutes, will help to reduce the starch of the potatoes.

How to Make Easy Potato Fry- Potato Roast Recipe, Quick South Indian Style

Peel potatoes, cube into medium bite sizes. Soak in salt water for 10 minutes and drain out.

Heat oil in a non stick frying pan with oil, add mustard seeds and allow it to splutter. Add curry leaves and stir well.

Keep the flame to very low, add kashmiri chilly powder, turmeric powder and hing powder. Saute it for a couple of seconds.

Add cubed potatoes and combine well.

Add salt and mix until combined.

Add 1/2 cup water and keep the flame in medium, allow it to boil.

When it starts boil, keep the flame in very low.  Close the pan with a lid and cook until potatoes turn soft and tender. Add fennel powder and pepper powder, combine well.

Finally add chopped coriander leaves and switch off the flame. Serve along with rice and rasam.
