Egg Chicken rolls recipe is a popular street food of Kolkata/ calcutta. It is orginated from kolkata, that’s why it is often called the ‘ calcutta egg rolls’. This is a tasty and filling wrap, that’s loaded with chicken. This a roll where juicy spicy chicken are wrapped in flattened bread/ roti that has been coated with egg. This recipe is most widely used in roll centres of Kolkata. It has two basic parts. One is making roti and another is making the chicken filling. Once both ready, all you need to do is to make rolls and serve. The detailed recipe with step by step cooking pictures follows.
Traditionally this rolls are wrapped in a layered paratha bread. Paratha is dough that is kneaded into rope, then coiled into a round patty. It is then flattened with rolling pab and partially fried in oil on a tawa/ griddle. These semi cooked parathas are then kept aside until needed, at which time they are put back on the tawa and cooke through. If an egg is to be added, it is usually cracked into the tawa and the paratha put on top of the egg. They both cook together and the paratha gets coated on one side with the egg.

How to Make Egg Chicken rolls Kolkata Street food Style- Kolkata Style Egg Rolls- Chicken Wraps Quick Version
Wash the chicken cubes and clean well. Drain out pat dry and set aside.
Marinade the chicken cubes with lemon juice, curd, salt, red chilly powder, garam masala powder, cumin powder, fennel powder, coriander powder, tandoori masala powder, curd and refined oil. Mix well and marinate for at least 30 minutes in refrigerator.
Meanwhile make chapathis, in a bowl add whole wheat flour, salt, enough water and little ghee. Combine well and knead the dough lightly for 1-2 mins to make sure it is completely pliable and smooth before using. Roll the dough by hands and form a cylindrical log of the dough and cut into 5 equal portions. Then press gently to form the patties and roll it using a rolling pin to a flat roti. Once the roti is evely rolled out, pan fry the chapathi using very little ghee and set aside. ( as how you make normal chapathis)
Heat a pan with 1 tbsp oil, once the oil is hot enough add ginger paste, garlic paste and green chilies. Fry until the raw smell goes on.
Then add sliced onion and saute until onion turns soft and golden brown in color.
Then add marinated chicken and give a good saute to incorporate altogether.
Cover and cook for 10 minutes on a slow heat, the chicken will leave out its own juices to cook, so do not add water.
When chicken is cooked and dries up, Saute for 5 more minutes and add few coriander leaves and onion rings. Combine well and off the flame. Chicken filling is ready and set aside.
Beat 5 eggs with salt and set aside. Divide the egg batter into 5 portions.
Heat a flat tawa, sprinkle little oil. Pour 1 portion of egg batter and spread by tilting the pan from side to side, to form a circle. Now quickly put a chapathi into the wet egg side and allow to cook in low to medium heat. Press to cook inside and egg will soon cook and set to the chapathi.
Repeat the process, until chapathi and egg is finished. Set aside.
Now the assembling. Place one egg chapathi on a strip of butter paper. The egg side should be up. Spread 1 tsp tomato ketchup and sprinkle one pinch chat masala on top.
Add chopped onions, green chilies and coriander leaves.
Lay a portion of the cooked chicken in a straight line in the middle of the chapathi.
Roll the chapathi with the chicken stuffing firmly. Wrap the roll with the stuffing along with butter paper and tuck it in at the botton to seal neatly.
Serve along with sliced onion, lemon wedges and tomato ketchep.
