Idiyappam/ noolappam is a favorite breakfast in Kerala. Ragi Idiyappam and upma is really easy to prepare and one of the healthiest and filling breakfast too. Idiyappam or noolappam is traditionally made with rice flour and it is pure white in colour, the recipe which I have shared before. It is a steam cooked meal is easy to digest and hence it is prepared as a dinner also. But Today I am sharing the recipe of both Idiyappam and upma which is made by using ragi flour. Upma was the result of my experiments with some left over ragi idiyappams. I love all idiyappam varieties and this finger millet idiyappam was so soft and tasted great that my kids and hubby gave a thumbs up. Ragi contains high amount of calcium which can be the key factor for bone development. If you and your family consume ragi regularly then you people can control diabetes. It also can improve hemoglobin level of you body so that it can be the great choice for breast feeding mothers. It will increase the milk production to feed their babies and it will enrich the milk with vital amino acids, iron and calcium. Adding a decent amount of ragi to our diets would do wonders for our health and nutrition. I try to include in many forms like idli, dosa, idiyappam, upma, laddu’s and many more, will do post these recipes one by one.
Tips- Use only boiling water to make the dough, add water accordingly or little by little to knead the dough. The quantity of water may depends upon the freshness of the ragi flour. For sweeter version of the ragi idiyappam add cardamom powder and sugar along with coconut mixture. When the idiyappam is pressed when the dough is warm, it is more easy to make. You can serve ragi idiyappam with stew, coconut chutney or kadala curry.
How to Make Ragi Idiyappam and Upma Recipe- Finger Millet String Hoppers Upma- Healthy Recipe
In a deep mixing bowl, add ragi flour, rice flour and salt. Mix well and set aside.
Add boiling water little by little over the flour and combine well using a spatula. Allow it to cool for few minutes.
When it is little warm knead well using your hands to smooth dough like that of chapathi dough. Rub 1 tbsp ghee or oil at the final stage and set aside.
Then take a idiyappam mould and fill the idiyappam maker with a handfull portion of dough.
Grease an idly plate or idiyppam plate with a drop of oil and sprinkle grated coconut.
Squeeze the strings in continuous circular motion over greased idli plate. Topped with little grated coconut too.
Steam cook for 10- 12 minutes. The hot idiyappam is ready to serve.
For making upma, heat a pan with ghee and add mustard seeds. Allow it to splutter.
Then add roasted channa dal or urad dal, stir for few seconds.
Add ginger and green chilies, saute well in medium low flame for a minute.
Add chopped onions and saute until onions turn slightly brown. Add curry leaves and combine well.
Now add the shredded idiyappam and combine well and adjust salt.
Add grated coconut and off the flame. Serve along with tea or coffee.
