One of my favorite mutton curry, this goes well with chapati, roti, rice, pulao, doasa and biryani’s too. This is one of my Mom’s best recipe and she serves it with chapati or pulao. Amma’s special easy mutton curry is an exceptional delicacy made with mutton pieces cooked in onion tomato based gravy. This is a very popular dish in our home especially in our relatives circle. This mutton curry is exotic to taste with fresh flavors of spices along with ginger, garlic, green chilies, onions and tomatoes. This curry is a simple dish where mutton pieces are cooked in a onion based ground paste along with spices. This delectable mutton curry is sure to tickle your taste buds. If you like beef or chicken you can use them instead of mutton, only the cooking time will vary. And also, for cooking chicken, you don’t need a pressure cooker too, you can make in a cook pot. My amma cooks especially and specially her non veg recipes are simply superb. My grand mother was also so perfect in cooking, in festival times and functions all relatives used to prefer her cooking. Tips- If you don’t like pressure cooker, you can also cook in a non- stick pan with tight lid. This is a medium spicy curry, if you want it to be much more spicy, increase the quantity of pepper and red chilly powder. Make sure to wash the mutton with salt and vinegar, to reduce the smell of the raw meat.
How to Make Mutton Curry- Amma’s Special Easy Mutton Curry Kerala Style
Clean and wash mutton pieces with salt and little vinegar, drain out the water and set aside.
Heat oil in a pressure cooker, add cardamom, cloves, pepper corns, cinnamon stick, fennel seeds and star anise. Saute for a minute.
Add finely sliced onions, ginger, garlic and green chilies. Saute until the onions turns slightly brown.
Add tomatoes and combine well. Saute for a couple of minutes.
Add turmeric powder, coriander powder and red chilly powder. Combine well and in a low flame, until oil separates out from the masala. Off the flame and allow it to rest until the masala cools down.
Transfer the onion masala to a blender and sprinkle little water. Ground the masala to fine paste and set aside.
On the same pressure cooker , add 1 tbsp oil and add mustard seeds. Let it splutter and add bay leaves and saute for a couple of seconds.
Now add the ground masala and combine well. Pour 1 cup water and required salt. Do not add too much water, water will come out from the mutton while cooking.
Add mutton pieces and vinegar, mix well. Close the pressure cooker and cook in low flame till 2 whistle, turn off the flame.
Add curry leaves and corainder leaves, combine well. Serve along with chapati or rice.
