Is a versatile Indian breakfast simply made with eggs, tomatoes, onion, green chilies and Indian spices. This is one easy and quick version of basic omelette that is much loved in my home. My family enjoys eggs and we eat them on a regular basis. The Indian style of making masala omelette includes the use of turmeric powder, coriander powder, pepper powder, garam masala powder etc. Some people use vegetables such as carrot and capsicum in it. Omelette is a dish made from beaten eggs quickly fried with butter or oil in a frying pan without stirring as in scrambled egg. It is quite common for the omelette to be folded around a filling such as vegetables, meat, cheese etc. To obtain a fluffy texture, eggs are beaten with a small amount of milk or even water, the idea being to have bubbles of water vapour trapped within the rapidly cooked egg.

Beat the eggs till frothy along with salt, milk and crushed pepper.
Place a frying pan on stove top and allow it to heat up. Add butter and allow it to melts.
Add onions and saute until it turns soft and tender.
Add chopped coriander leaves, curry leaves, green chilies and tomatoes. Saute until tomatoes are soft.
Add turmeric powder, coriander powder and garam masala powder. Saute until the raw smell fully goes on. Add lemon juice and adjust salt, off the flame and transfer it to plate and set aside for later use.
Heat the same pan and add remaining butter and allow it to melts. Pour the egg batter to the pan.
Simmer the flame and leave to cook for 2-3 minutes. Don't need to flip the omelette. Place the onion masala mixture on the one side of the omelette.
Gently fold the omelette and add cheese slices or grated cheese. Serve hot along with bread.
