Here comes yet another crab roast from the God’s own country. And this one is also a signature recipe of my Amma and one of our family favorite njandu Piralan. Like any other spice, freshly ground green pepper is much flavorful and aromatic than the ground black pepper powder. And once you have had freshly ground green peppercorns to your dishes, there is no turning back. When I think of fish or seafood, I always have the feel that my mother is the best. Last friday, I asked my mother to cook this njandu piralan and noted down each and every measurements and steps and I am sharing with you all. So just get some crab and try out this, the detailed recipe with step by step cooking pictures follows.
In this recipe freshly ground green pepper corns and crushed fennel seeds are used to enhances the flavor of the dish. Crab green pepper roast is a simple tasty dish that goes well with rice, chapathi or puttu. Crab meat is a popular and versatile type of seafood. It is also very healthy and a good addition to a balanced diet. If you haven’t tasted crab meat, you are definitely missing out something delicious. I have already shared the recipe for making crab roast few months back, but this recipe is very different so I am sharing here again. I got the large variety crabs, so I have halve them and used, If you get small crabs then you can use them whole instead. These kind is so fleshy, but small ones have some meat and remain juicy perfectly fit for fry or masala recipes.
Tips- If you are using whole crabs, then with the help of a knife cut the crab into two pieces from center and detach the legs. Then clean the pieces in running tap water for a while and drain out. This crab roast is usually spicy, you could adjust spice level accordingly. Fry shallots till they turn golden brown, browned shallots will impart nice aroma and taste to the dish. You can make the masala with a little sauce or make them dry according to your wish. The crab changes to orange color after it gets cooked perfectly.
How to Make Kayal Njandu Pacha Kurumulaku Piralan Amma Special Recipe- Kerala Fresh Water Crab Green Pepper Roast
Clean crab well in running water, if it is large crab then chop into halves.
Crush ginger, garlic, 5 shallots and green pepper corns, set aside.
Marinade the crab with crushed ingredients, turmeric powder and salt. Allow it to rest for 20 mins at least.
Place a wide big kadai/ pan on flame and pour coconut oil. Add fenugreek seeds and curry leaves, saute for a couple of seconds.
Add shallots and saute until it turns golden brown in color
Add coriander powder and crushed fennel seeds, saute until raw smell diminishes.
Add marinated crabs and combine well, add 1/4 cup water too.
Cover the pot with a lid and cook for 10- 15 mins.
Once cooked, add tamarind water and combine well. Stir and cook for few minutes.
Off the flame and serve along with rice.
