Everyone knows how great rotisserie chicken is. The problem is, everyone buys it at the store when it is so much better made at home. This is my favorite way to do chicken on the oven and it is so so easy. This is one of my family favorite dish that we wished to have more frequently. Grilling lip smacking chicken in the oven( OTG) is not all that difficult. I made this grilled Arabian style chicken using rotisserie setting in my electric oven. It is perfect as the main dish of a simple meal with french fries and cole slaw. This is the most tasty way to make a bird with enough flavor to satisfy anyone, but mild enough for everyone. The detailed recipe with step by step cooking pictures follows.
For this recipe Arabic masala is must, to get the authentic taste. Here I have used homemade Arabic masala powder, if you want you can even use store bought one. Arabic masala is almost same as the Indian garam masala. But if you want you can prepare it easily at home. In a frying pan add 1/4 cup cumin seeds, 1/4 cup fennel seeds, 1/4 cup cinnamon stick, 1/4 coriander seeds, 3 tbsp peppercorns, 1 tbsp green cardamom, 10 dry red chilies and fry it for few minutes in low flame stirring it continuously, until a nice aroma arrives. Then off the flame and add 2 tsp turmeric powder and combine well. Allow the spices to cool and grind in a blender, keep in an air tight container for later use.
Tips- Temperature settings and cooking time may vary depending on oven so adjust the timing accordingly. Vegetarian can replace the chicken with panner or potato. Here I have explained about preparing Arabic masala( read above paragraph) in bulk, that you can store it in a sun dried, air tight container and use as required. It will remain fresh for up to a year. I have used fresh ginger, garlic, onion, green chilies etc. If you don’t have it fresh you may substitute with dried powders for onion, ginger and garlic. I find fresh ingredients flavor is better for grilled chicken.
How to Make Arabian Style Grilled- Rotisserie Chicken Recipe- Oven Grilled Juicy Whole Chicken
In a wide deep bottom pot, pour water, vinegar and salt. The water should be salty, then dip the chicken in water for 30 mins. This helps the chicken to be soft and moist. (optional step)
Then clean and wash the chicken well, pat dry it with the help of a kitchen towel or tissue paper.
Using a knife or fork prick the chicken on all sides.
Squeeze lime juice and add salt to the chicken. Rub it well using your hands to coat the chicken evenly.
Add Pepper powder and rub it well.
Add Arabic masala and combine well. Let it rest for 15 minutes.
Meanwhile grind onion, tomatoes, ginger, garlic, green chilies and olive oil to fine paste.
Add ground masala paste to the chicken and followed by kashmiri chilly powder. Rub very well with your hands, so that the chicken gets coated with the masala evenly.
Allow the marinated chicken to rest in refrigerator for at least 3 hours. Take the chicken from fridge and keep it out for 15 minutes before grilling.
Preheat the oven to 180 degree for 10 minutes. Use a twine to fix the legs together and skew the chicken on to the rotisserie, tighten the clamps and grill it for 45 minutes to 60 minutes in 175 degree c.
After every 20 minutes, brush the chicken with melted butter.
Serve along with mayo dip and french fries
