Jalebi is one recipe that has been requested by my many readers and so I had decided to post jalebi recipe. It can be made in two method, one is a quick instant version and the other is the traditional method, where the batter is kept for fermentation for 12 hours or for even 24 hours. Today I am sharing with you the instant one, which you can make in a jiffy. Making jalebi is not a rocket science, a few things that you need to keep in mind while making jalebi recipe. Jalebi is a popular sweet from the Indian cuisine. So lets see how to make crisp, syrupy, juicy and crunchy jalebis in no time. The detailed recipe with step by step cooking pictures follows.
It is the traditional Indian sweet, generally prepared on the festivals like Diwali and Ramadan. For making this yummy sweet at home the batter is prepared from maida and yeast. Then deep fried in hot ghee or oil until crispy and then soaked in warm sugar syrup. This homemade jalebi recipe is actually very easy to prepare and tastes absolutely delicious. I am totally impressed with the taste, it was so crisp, juicy, sweet and yummy. I have been experimenting all year to make the perfect jalebi, that is crispy out filled with the syrup inside, does not get soggy, and is absolutely better than the market ones.
Tips- Make sure the batter, it is a thick paste and kind of gloopy. Consistency should be such that it is flowy, but thick. The batter should be neither too thick nor thin. Consistency of sugar syrup should be one string. Lemon juice is added while making syrup to prevent sugar syrup from solidifying. It doesn’t affect the taste of syrup. Dip jalebis in warm sugar syrup immediately after frying. Dip in sugar syrup for 1 minute, fold in syrup and take them out. Timings are very important in this recipe, yeast fermentation required 15 mins. Once the jalebi batter is prepared, just keep the batter for maximum 10 minutes. Never leave the batter for long and do not store it. Use the batter within 15 minutes.

In a bowl add yeast and 1tsp sugar. Pour lukewarm water and mix well, let it sit for 15 minutes.
In a large bowl add all purpose flour, garam flour, orange red food color, melted ghee and yeast mixture. Combine well.
Add water accordingly and make a smooth batter. ( see tips above )Let the batter rest for 10 minutes.
Meanwhile make sugar syrup, in a sauce pan add sugar, cardamom and water. Cook until the syrup thickens to one string consistency. Off the flame and add lemon juice, mix well.
Now pour the batter in the sneezing bottle. Here I have used my ketchup bottle, that will be perfect.
In a wide frying pan, heat oil or desi ghee. Squeeze the bottle and make centric rings with the batter.
Fry both the sides until crisp.After frying remove from oil and immediately put the jalebis in the warm sugar syrup. Sugar syrup should be medium hot while adding the jalebis. Dip the jalebis well in sugar syrup to coat it evenly for 2-3 minutes.
Remove from sugar syrup and serve to a plate.
