Tharavu Mutta Piralan- Duck Egg Roast Recipe- Bachelor’s Special Simple Egg Roast

This is simple egg roast recipe, nothing fancy at all. Perfect side dish or touchings for bachelors and those who have little time on their hands to cook something tasty and nutritious on a busy day. Boiled eggs are cooked in spicy onion tomato masala. Perfect for breakfast, dinner or lunch along with appam, noolappam, puttu or even taste great with roti or chapati. The easy recipe with step by step cooking pictures follows.

Eggs are the best companion for bachelor cooking I guess, easy to make it for a side dish for lunch too even with steamed rice. Eggs is a kitchen staple in homes without dietary restrictions. There are countless ways of cooking eggs like fried, curried etc differ from state to state and region to region. Duck Egg roast is a staple in Kerala, mostly found on the breakfast table, I always enjoyed from my childhood. Caramelized onions with tangy tomatoes  and aromatic spices make the base of this classic roast. A very nadan recipe for egg lovers, I served it with puttu.

Tips-  Add salt when you are boiling eggs, its easy to remove the egg shell after boiling. This recipe taste better without much gravy. If you want more gravy do not add water, use thick coconut milk instead. Here only green chilies and pepper powder are used, don’t use chilly powder, it won’t suite for this roast. If you want to make more spicy increase pepper powder or green chilies. If you want you can use hen eggs too.

How to Make Tharavu Mutta Piralan- Duck Egg Roast Recipe- Bachelor’s Special Simple Egg Roast

Heat a wide frying pan with oil, Add garlic cloves and green chilies. Saute for few minutes, until garlic turn slightly brown and soft.

Add sliced onions and vegetable stock cubes, saute for few minutes. Saute until onions turn soft and brown in color. I have not added salt, due to using of salted vegetable cubes.

Add sliced tomatoes and saute until tomatoes are soft.

Keep the flame on low and add turmeric powder, fennel powder and pepper powder. Saute until raw smell goes on.

Add boiled eggs and curry leaves, saute for 3 more minutes. Add salt after checking the curry only. Off the flame and serve along with any bread of your choice.
