It is a simple and delicious Kerala style beetroot stir fry. Actually thoran is a coconut based simple stir fry dish from Kerala region. Thoran is usually made with any vegetables like carrot, beans, cabbage etc. Coconut is coarsely ground along with cumin seeds, chilly powder, turmeric powder, shallots and salt. My amma/ mom used to make this beetroot thoran recipe. I used to love the beetroot this way only and I always would ask my mom to make it. So this is also a recipe that adapted from my amma. Beetroot Thoran, a very colorful and nutritious side dish for rice along with rasam or moru. There are many ways to enjoy beetroots, it can be grated raw over salads, add them to your fresh vegetable juice. Beetroots contain valuable nutrients that may help lower your blood pressure, boost your stamina, fight against cancer and support detoxification. Beetroots also contain vitamin folate, which helps reduce the risk of birth defects. Beetroot is a natural source of vitamins and minerals. Beetroot has liver, gall bladder and kidney cleansing properties.
Tips- For cooking beetroot, you could add some 1/4 cup of water while cooking and cover the pan with a lid until they turn tender. You can use grated beetroot also for this thoran, but I just prefer them to be finely chopped. Using shallots while tempering the stir fry enhance the taste of the dish, so do not skip it. Green chilly is a optional ingredient here, I have added to increase the spice level.
How to Make Beetroot Thoran Recipe- Kerala Sadya Recipes- Kerala Style Beetroot Stir Fry
Heat oil in a pan, add mustard seeds and allow it to splutter.
When the mustard pop, add dry red chilies, curry leaves and sliced shallots. Saute until shallots are brown.
Add chopped beetroots and some salt. Mix well to coat the beetroots with the oil and spices. Then sprinkle 1/4 cup water and cover the pan with a lid and cook until beetroots are tender.
Meanwhile coarsely ground grated coconut, 2 shallots, garlic, cumin seeds, turmeric powder, chilly powder and green chilly. Ground to a course mixture without adding water.
Make a well in the middle of the pan and add the ground coconut mixture to it. Cover the ground mixture with beetroot, then close the pan with a lid, steam it for 5 more minutes.
Then stir well, saute for few more minutes and serve hot along with rice.
