I have used my hand blender, but you can use food processor, immersion blender, regular mixer or making it completely by hand work with hand whisk( but it is too risk if you choose to do it by hand, expect tired arms and strong biceps). Tips- Use the best, freshest eggs you can find for homemade mayo. Always use eggs are in room temperature. For thick and creamy mayo, the trick is gentle persuasion, add the oil slowly like a tablespoon or so at a time. While blending constantly, your mayo will be ready. Homemade mayo doesn’t last as long as store-bought mayo, which is another reason why it’s nice to make a cup or so at a time. For health reasons you can even avoid raw eggs and use pasteurized eggs from the store.

In to a large mixing bowl add in the eggs and blend until eggs are frothy.

After this is done I add in garlic paste, sugar, salt and lemon juice. Blend once more well.

I then start to slowly add the oil little by little, just a tea spoon at first and then slowly add more. While adding the oil, I blend the hand mixer too. Now with the mixer going full speed. When the emulsion starts to form, you can add the oil more quickly, but keep it at a fairly moderate stream. Adding the oil too fast will break your mayonnaise.

Now the mayonnaise is ready to use. Store unused portion in the refrigerator when it should keep for a day or two.

Heat a pan with oil and add chopped onion, saute until onions are soft and slightly brown.

Add tomatoes and green chilies, saute for a while.

Add chicken pieces and salt, combine well. Close the pan with a lid and cook for 5 minutes.

Add black pepper powder and mix well. Cook in slow flame for 5-8 minutes. Now need to add water, the chicken will cook by its own water and after all its a boneless broiler chicken.

The filling is ready, it should be dry.

Take one sandwich bun and simply cut straight through the middle and set aside.

Spread homemade mayonnaise on both the bun pieces. Then spread chicken filling on one slice of the bun and top it with few more mayonnaise.

Cover with the other slice and serve it.
