Today I am sharing the Kerala Style preparation of chilly chicken. I have already posted the Indo- Chinese version, I make chilly chicken in couple of ways. It was so easy to prepare, I prepared it yesterday afternoon for our lunch. Everyone in our house was coming to the kitchen asking what that delicious smell was. I love surprising my family with comforting meals after along time. After taking one bite of this chicken, my husband said, ‘ we have a new world’s best chicken recipe!’ This chicken is out of this world good! I served it over Kerala rice and moru curry. It was flavorful, juicy inside with full of spices which made it so delicious. I just knew I had to get a hold of this recipe for my family and guest, I too enjoy for our daily chicken habits and well. I have been wanting to share this recipe here with you since I started blogging. I am not sure why I haven’t yet. If you have a crowd for a meal this super easy to make. In this preparation chicken pieces cooked with freshly ground spices and roasted with onion masala. This goes well with rice or roti and the recipe taste good in dry version only. It can be served as a starter or as a accompaniment to rice, naan or chapathi. This is a must try recipe, as you will cook it again and again.
Tips- To get the right taste, do stick on to the exact measurements. I highly suggest using tender chicken. For this recipe capsicum and green chilies are used to add more flavors. It lends a flavor and aroma that is unique. It can be made with bone-in or bone-less chicken. I suggest using bone-in chicken to yield juicy, flavorful and tasty chilly chicken. No tomato sauce are used and I suggest using fresh tomatoes to get the tang. Do not add any water while cooking chicken, the meat will release water. Adding onions and tomatoes is an essential ingredient to bring out the perfect taste to the whole dish. This one is a spicy chicken dish, to reduce the heat adjust green chilies and red chilly powder according to your spice level.
How to Make Kerala Chilli Chicken Recipe- Swadcuisine Special Spicy Dry Chilly Chicken- Easter Special Recipe
Clean and wash chicken pieces along with salt and vinegar. Then wash well in running water and drain out completely in a colander, set aside.
Heat a pan and dry roast kashmiri red chilies, coriander seeds, cardamom, cloves, star anise and cinnamon stick in a very low flame for 3-4 minutes. Do not allow spices to change its color. Then off the flame and allow it to cool down.
Transfer the spices to a blender and make a coarse masala powder.
Transfer the drained chicken pieces in a bowl and add masala powder, crushed ginger, crushed garlic, salt, vinegar and curry leaves. Combine everything together and let it rest for at least 20 mins.
Transfer the marinated chicken pieces to a deep bottom frying pan. Cover the pan with a lid and cook for 15 minutes in slow flame. Do not add water, chicken will cook by its own water. ( broiler chicken will cook faster than country chicken, if you are using country chicken add water accordingly and cook until chicken turn soft and tender. )
When chicken turn soft and tender, off the flame, transfer it to plate and set aside.
Heat same pan along with coconut oil and add mustard seeds, let it splutter. Then add in curry leaves and saute well.
Then add in onions and saute until onion turn slightly brown.
Add in tomatoes and saute until tomatoes turn soft and mushy.
Keep the flame in very low, add chilly powder, kashmiri chilly powder and turmeric powder. Saute until raw smell diminishes.
Then add in capsicum, green chilies and cook in low flame for 5 minutes. If the masala is too dry then sprinkle little water.
Add in cooked chicken pieces and saute until chicken absorbs the masala mix completely. saute for 5 minutes in low flame and adjust salt at this level.
Drizzle little coconut oil on top and add coriander leaves. Combine well and off the flame. Serve along with rice or chapathi.
