Hi, you guys! Happy Easter! The fact is, on bussy summer weekends, these baked eggs are one of my kids favorite breakfast dishes. They not at all require a long list of ingredients and really very quick to make. It is quite simple, healthy and delicious breakfast, brunch, snacks recipe with eggs perfectly baked and seasoned in tomato cups. This recipe is actually more fun version and will look impressive to your guests but is very easy to prepare too. I had this recipe for a while and I figured this would be the time to share with you all. The detailed recipe with step by step cooking pictures follows. Baked Eggs Recipe

The eggs got ready in less than 20 minutes. I cooked my eggs foe a total of 18 minutes and my whites were just set. So If you like your eggs a bit more dome that, add a few minutes to the baking time. The other good thing is that you can use any kind of grated cheese you have got on hand. You can serve this along with whole grain bread toast.

Tips- Use very ripe large tomatoes. You can substitute tomatoes with capsicum/ bell peppers too. But tomato taste more good than capsicum. Then cut tops off the top third of tomatoes and using a sharp knife, gently cut around the inside perimeter of each tomato and scoop out the seeds and inside flesh, being careful to keep the sides thick and intact. Use muffin tin for baking so they stay in place. You can make 5 or you can make 36 at a time in 30 minutes! Just make sure you have enough muffin pans and you’re set. This can be cooked in stove top with the help of idli pot and idli moulds for 15 minutes in medium heat.

How to Make Egg Baked in Tomato cups- Baked Eggs Recipe- A Healthy Baked Eggs in tomato cups

Preheat the oven in 200 degree C for 15 minutes. Then choose very ripe red and large tomatoes. 


Cut off the top of the tomato and scoop out the inside seeds, flesh with a spoon or knife. ( see above paragraph for cutting tips)


Place the tomato cups on muffin tray placed with paper muffin cups. 


Then crack the eggs into the hollow of the tomato, then add in chopped green chilies and onions. Finally add in pepper powder, salt and grated cheese. 


Place it on preheated oven and bake in 200 degree C for 20 minutes. Cooking time may vary depends upon oven.

Take out from oven and add your desired toppings while serving. 


Serve hot along with bread toast.
