Kerala traditional soft drink made with lemon, basil seeds, green chilies, ginger, salt, sugar syrup and chilled water. It is made in a cocktail shaker or glass jar and shake well after adding all ingredients together, hence the name kulukki sarbath/ shaken lemonade. It has a very refreshing taste of sweetness along with tangy and spicy. The word ” Kulukki” in malayalam means shaken and “Sarbath” means juice. This is an easy to follow recipe, I have used here a tall jar with lid to make this sarbath. Every ingredients is put into this jar and then it is covered with tight lid and is shaken in a cocoktail style and served chilled. ( In traditional way or street stalls they put all ingredients into a tall steel glass and then it is covered with another glass and is shaken) A very popular drink in Kerala which can be found in almost every juice shops. As the heat from the scorching sun increases daily, I am in search of refreshing drinks and cocktails for my parched throats.
Tips- Basil seeds lower body heat that’s why it is one of the important ingredient, do not skip. Basil seeds are also known as sabja seeds or sweet basil seeds. For variety flavours, you can even use mint, pinepple pieces, crushed strawberry, pepper powder and even masala too. Adjust the quantity of green chilies according to your taste. While serving kuluki sarbath fill the glass till half filled and you can even pour soda water to fill the glass to the brim.
How to Make Kulukki Sarbath- Spiced Shaken Lemonade with Basil seeds- Perfect Summer Drink
Make sugar syrup with sugar and water. In a bowl add 4 tbsp sugar and 1/2 cup water and boil until liquid turn the consistency of syrup. Switch off the flame.
Soak basil seeds in warm water for at least 10 minutes. And cut lemon, green chilies and ginger, set aside.
In a shaker or any mixing jar, add soaked and drained basil seeds and green chilies.
Then add in chopped ginger and lemon juice.
Then pour chilled water and add salt.
Then pour sugar syrup.
Cover the jar with a tight lid and mix or shake nicely for 20 seconds.
Pour this to the serving glass till three fourth filled and add ice cubes.
