This dosa recipe reminds me of my late grandma/ ammamma to me. She was an expert at cooking, especially the traditional dishes. This crispy, instant wheat dosa is also her recipe. It is made using whole wheat flour or atta. A quick instant atta dosa recipe to make an healthy dinner, breakfast or meal with some chutney. Here I have used only wheat flour to make this dosa recipe and for crisp texture little ghee is used. It can be served with any easy chutney like red coconut chutney, hotel style coconut chutney, spicy lemon chutney, coconut chutney. But this time I have served this along with chicken stew, and it was a great combo my family enjoyed it.
Is an instant and tasty dish, which does not require any elaborate preparation like soaking, grinding, fermenting nothing. And can be made quickly, unlike the noramal dosa. This dosa recipe is perfect for diabetic patients, their is no addition of any flour other than wheat flour.
Tips- To get more crispy dosa you can use little rice flour while making the batter. If you want you can use buttermilk or curd diluted water to mix and binding the flour. Adding a tbsp of curd to the batter adds nice aroma and brings a good color to the dosas. Suppose if the batter turn too watery, then don’t worry add some adda or rice flour to adjust its consistency. If you want you can season the batter with mustard, urad dal, curry leaves, green chilies and then saute the shallots and then add it to the batter, my mom does this way.
How to Make Wheat Dosa- Instant and Crispy Gothambu Dosa/ Atta Dosa Recipe
In a mixing bowl add wheat flour, curd and salt. Mix it well and add little water at a time and make smooth and lump free batter.
Consistency of batter should be like dosa batter. Keep it rest for 10 minutes. ( its optional) Make lump free smooth batter with a whisk or blend it in a blender.
Heat a dosa pan at medium heat. Once the pan is hot, keep the flame on low. ( I have used non stick pan, so I did'nt wipe the pan with oil) Then add now a ladle full of batter and spread the batter on the pan in circular motion. Then add some ghee or oil on top and let it cook for a couple of minutes in low flame.
Now flip dosa and let it cook from this side too. Once dosa is crisp from both sides take it out.
Serve hot along with favorite chutney or curry of your choice. It taste best with ghee and sugar too.
