That I ate three pieces of this banana bread, the crust right out from the oven, is crispy and flavorful. The bread itself is soft and very moist. Really felt difficult to cut it perfectly. It can be served warm or room temperature, banana bread is a comfort food that just hits the spot. Give it a try and let me know what you think! I used my hand mixer to cream the butter and sugar and incorporate the eggs, but for the bananas and flour mixture I use a spatula and mix gently until everything has just come together. Tips- If you want to make these into muffins, use the same recipe and for mini muffins bake approximately 20-25 mins and normal size muffins 30- 35 mins. Add a handful of chopped nuts or chocolate chips when you add in the flour. Those are some yummy additions! I recommend cutting the sugar down to 3/4 cup if adding chocolate chips in.
How to Make Banana Bread Recipe- Banana Loaf Cake
Soak black rasins in orange juice for 5 hours. Drain out and set aside.
In a large mixing bowl, add the all purpose flour, baking soda, salt and baking powder. Combine well.
Sift together and set aside.
Peel the very ripe bananas and add them to a bowl. Using a dinner fork mash them. Leave the bananas as chunky or as smooth as you prefer. If you prefer an entirely smooth banana bread, mash the bananas in a mixer or blender.
In a large bowl whisk together butter and sugar until combined.
Crack the eggs along with butter mixture and whisk completely combined and the mixture is creamy and smooth.
Add vanilla essence and mashed banana too. Combine well.
Add the flour mixture little by little, gently stir using a spatula until the ingredients are just barely combined and no more dry flour is visible.
Last but not least, add the rasins over the batter and gently fold them in.
Pour the batter into the greased and prepared loaf pan, using the spatula to scrape all the batter from the bowl, smooth the top of the batter.
Place the loaf pan in the pre-heated oven. Bake until the top of the cake is caramelized dark brown with yellow interior peeking through and a tooth pick inserted into the middle comes out clean. Baking time may vary depends upon the oven, it will take around 50-55 mins in 200 degree C.
Cool in the pan for 10 minutes, this helps easier to remove from the pan. Leftover bread can be kept covered at room temperature for several days or wrapped in foil and frozen.
