So yesterday when I prepared mango smoothie I have made an extra cup and baked this gorgeous mango cake. For making this cake recipe we need just few ingredients only. The mango puree and milk just makes the cake so so soft and moist. Alphonso mangoes work the best for this recipe. It took me about 2 mangoes to make about 1 cups of fresh puree, I skinned the mango and added to a blender along with 1/ 2 cup milk, so I got 1 and 1/2 cup puree. Tips- Always use room temperature ingredients for baking any cake. Never, ever use fridge- cold ingredients. Do not over mix the batter and never over bake the cake. Measurements of the ingredients is very important for this recipe. Make sure that oven is well preheated before you start baking. To bring out the mango flavor at its best, always use good quality mangoes like alphonso and kesar. If u are not getting these types of mangoes, then you can use canned mango pulp. While serving drizzle mango sauce on top was just out of the world. You can adjust sugar according to the sweetness of the mangoes using.
How to Make Mango Cake Recipe- Moist and Soft Mango Cake- Mango Recipes
In a bowl take dry ingredients like all purpose flour.
Then add in baking powder and salt. Mix it with a spoon.
Sift them in a sieve for at least 2 times and set aside.
For making mango puree, in a blender add chopped mangoes and milk. Blend it well until smooth. Set aside for later use.
In an another bowl, add softened butter and sugar.
Beat it well using an electric blender or hand whisk. Then add in eggs and beat it again until smooth and forthy.
Then add in mango pulp and blend well for few minutes.
Now add the dry mixture little by little and fold gently using a spatula. Do not over mix the batter.
Then add in vanilla essence and fold every gently until everything incorporated.
Then add in chopped mangoes and fold it gently.
Pour the batter in a greased pan. ( grease the pan with butter or you can spray it with nonstick cooking spray as well. ) Then top it with some more chopped mangoes.
Bake the cake in a pre-heated oven, ( pre-heat the oven to 180 degrees C for at least 10 minutes. ) for 40-45 minutes or until the toothpick inserted into the center comes out clean.
Let the cake cool into the pan for 10 minutes, after that invert it on to a cooling rack and let it cool completely.
