Cabbage and Carrot Thoran/ poriyal/ stir fry is a traditional Kerala cuisine preparation very commonly done in all houses and served along with rice. It is a dry vegetable dish prepared using chopped or grated cabbage and carrot along with coconut. It is one of the main vegetable dish that I always prepare during Onam and Vishu sadhya. You can also mix and match vegetables of your choice just like this with carrot and cabbage.
Tips- Use coconut oil and curry leaves are must for authentic Kerala flavor. You can make this stir fry with either cabbage or carrot or even add some fresh green peas to it.
How to Make Cabbage and Carrot Thoran Recipe- Kerala Sadya Thoran Recipe
Chop everything and set ready.
Pulse grated coconut, shallots, garlic, turmeric powder and cumin seeds in a blender. Only to crush the ingredients, do not ground it.
Heat a pan with coconut oil and pop the mustard seeds. Then add in dry red chilies and curry leaves. Add chopped shallots and green chilies, saute until onions are slightly brown.
Add chopped cabbage and carrot, mix well.
Then sprinkle half cup water and salt. Cover the pan with a lid and cook until they are done.
Make a well in the middle of the pan and add crushed coconut mixture. Cover the pan with a lid and cook for 3-4 minutes on low flame.
Then stir and saute for few minutes, so that the thoran will get dry. Serve hot along with rice and rasam.
