In a pan heat oil and add mustard seeds. When mustard seeds start spluttering, add the curry leaves, green chilies and chopped onions. Saute until onions are slightly brown in color.
Add the chopped spinach leaves and add little salt, saute for 2 minutes. At this time, the leaves will start to release water. Cover it with a lid and cook in medium heat for 3 minutes.
In the meantime, in a mixer add grated coconut, cumin seeds, garlic, turmeric powder and red chilly powder. Coarsely grind it, do not grind to a fine paste.
Make a well in between by shifting the spinach to a side. Add the coconut mixture in the centre. Now cover it with spinach and again close the lid and let it cook for 3 minutes.
Open the lid and drizzle little coconut oil on top and mix everything well and cook on high heat for 1 to 2 mins and off the flame. Serve long with rice and other side dishes.
