A vanilla sponge cake that can be served as a tea cake by itself or as a base for any other dessert. This is a classic, simple vanilla sponge cake that is made with basic ingredients like butter, eggs, flour, mik, vanilla essence, baking powder, sugar and salt. This recipe I am sharing today is made with the same ingredients as old fashioned vanilla sponge cakes. This vanilla sponge cake is very close to my heart. Today my littlest son told me to bake a cake for him, so I thought it would be a good time to share you the recipe I use for making the vanilla sponge which goes inside most of the cakes I make for my family. This recipe is adapted from a friend of my mine and she is a super home baker. This is a very light and delicate cake that is so very versatile with an array of fillings and icings to chose from.
Tips – Accurate measurements are essential when baking. The most important key factor in the success of this cake, is do not over fold in the flour. Originally I did the flour folding by using a spatula only. While using all the ingredients should be at room temperature. If you mix it exactly as I mentioned and use all the same ingredients exactly as listed you will have great success with my recipe.
How to Make Vanilla Sponge Cake- Moist And Fluffy Vanilla Flavored Cake with Froasting
Preheat the oven to 180C. Combine flour, baking powder and salt and sift twice.
In a large mixing bowl and add the butter, sugar and vanilla in it. Using the whisk beater, beat until sugar is completely dissolved. Then add eggs one by one and whisk until smooth and frothy.
Gradually add the maida mixture and mix well.
Add milk and fold the batter very gently.
Line the round pans with butter paper and set aside.
Pour the batter into the pan and bake in 180c for 40- 46 mins or until a toothpick inserted in the center comes out clean.
Cool it on a wire rack.
Place whipping cream and cream cheese in a bowl and beat on high with handheld beater or stand mixer until firm peaks form.
Use a serrated knife to cut the top off each cake to make it completely flat. This makes neat layers when you cut into the cake. Then spread a thin layer of cream over the top. Then place second cake on top. Cover top and sides with remaining cream. Pipe cream around the edges and decorate it using dark chocolate sauce or as u wish.
